Cuisine chez moi

I love to cook. And eat. The only thing that keeps me from cooking more often is dishes–I hate doing dishes almost more than any other chore.  Unfortunately, they’re one of those pesky things that has to be done all the time, especially here in the Land of Bugs. Also unfortunately, I did not marry someone who just happens to not mind washing up after dinner. I think he hates dishes more than I do.
But I digress.  Since moving here (aka now that I’m unemployed), we’ve been eating in waaaay more than we used to.  Not everything I make can be considered  a budget meal, but I think we’re spending less on groceries than before.  Baby steps, right?

Last night I made Thai Red Curry Shrimp from the June issue of Cooking Light.  I loved it! I wish I had made the full recipe so I had leftovers for lunch today.  I only made two servings because sometimes I feel kind of iffy about leftover seafood.

For dessert I made Lemon Pudding Cakes from the June issue of Cuisine at Home .  These were also delicious (I LOVE lemon!) and they were obviously meant to be, because I had a few issues while I was trying to pull them together.

First, the recipe calls for two eggs, and two eggs were all I had.  Of course the eggs have to be separated, so that the whites can be whipped and folded into the batter.  Right off the bat, I got some yolk into the whites.  I did my best to get it out, and crossed my fingers that the whites would still whip.  And by some miracle, they did (thankfully–I would have been ticked off if I got 5 mixing bowls dirty for nothing!).

Then, the puddings bake in ramekins (I always love the opportunity to break out my Emile Henry) in a water bath.  So I went to get my 8 x 8 pan out, and find a live bug inside. Lovely! Luckily, I recovered (the bug did not), and the puddings came out really well.  I did make the full four servings of those–I have no qualms about leftover dessert!

Tonight we have obedience training, so dinner has to be quick and easy.  I’m thinking spaghetti with Italian turkey sausage and homemade garlic bread.

So…I seem to have abandoned my blog for, holy crap, almost a month. Here’s some of what I’ve been up to:

Note to self: Add basil *after* the pizza comes out of the oven.

It’s no secret that pizza is one of my all-time favorite foods, and yet before our last move, I’d never made it from scratch.  As in, make the dough at home and EVERYTHING.  Despite having almost every kitchen gadget known to man, I do not own a pizza stone, a pizza peel, or even a freaking pizza cutter.  But you know what? I’ve had really good results with just a plain ol’ baking sheet.  I’ve been using this pizza crust recipe and I love it.  Last week I was lazy (and out of olive oil!) so I used Pillsbury refrigerated dough.  People, do not use this stuff.  I don’t know if it has to do with the recommended baking temperature or what, but the dough was not crispy and crunchy, and underneath the toppings it was pretty much soggy to the point where I couldn’t pick up my slice with my hands.  Making your own crust is super easy and completely worth it!


I’ve been making more of an effort to get out of the house and meet people and explore our new city.  I found a fabulous (yet tiny!) park this weekend and took the boy and the pup out there last night to see it.
